Raw Vegan Salted Date and Coconut Butter Dip

This recipe was inspired by One Arab Vegan. I came across her pic on Pinterest and immediately knew I was going to have it have for dinner. Her recipe, Raw Salted Caramel Dip, uses dates exclusively but I amped up my version with Artisana Coconut Butter that I’ve had unused in a kitchen cabinet for months.

Raw Vegan Salted Date and Coconut Butter Dip

Forgot the vanilla extract in this pic but I did add it in. Don’t you forget it!

Ingredients

1/2 cup of pitted dates

1 tbsp coconut butter

3/4 tsp vanilla extract

1/2 tsp sea salt

3 tbsp water

Method

Place all ingredients and one tablespoon of water into a food processor. Add the remaining two tablespoons of water as needed to create a creamy consistency.

Two apples, 10 strawberries and a handful of blueberries completed this meal.

I reluctantly shared with D 🙂 and we finished the fruit and have about 1/3 cup of this delicious dip left.  Perfect for breakfast tomorrow!
