In the past month I’ve been eating more cooked vegetarian and vegan fare. The holidays this year have been more social than last so I’m learning to work through staying true to my eating aesthetic. I haven’t been perfect and that’s okay as long as I continue to grow.
I still have been enjoying vegan raw food though and here’s a pictorial run-down of some of my faves in the past month.
First stop is the Cheesecake Factory for a holiday party.
I had the Mexican Lettuce Wraps minus the cheese and sour cream sauce. Very filling and tasty!
A couple of weeks ago I made a vegan raw food Avocado and Banana Ice Cream – no ice cream maker required.
Here’s the final yummy product…
For a friend’s holiday party I made Cacao truffles and two salad dressings. I was so nervous as this was the first time I had shared my raw fare with. . .well, anyone (other than D). The salad dressings were well-received. Especially D’s classic Basil Garlic creation.
I made Liz’ Persimmon Ginger Dressing, too. OMG! It’s my new fave. This offering wasn’t as popular as the Basil Garlic but that was fine with me because I loaded up on it without guilt. You’ve got to try it! Sorry I don’t have any pics for this one.
I also made Cacao Truffles from a Megan Elizabeth recipe. The main ingredient is carob powder but I only had cacao powder on hand and also they were supposed to be brownies but they’re so rich, I went with truffles instead for a smaller portion size. The ingredient list and instructions can be found in one of Liz’ vids.

These were the least popular item of what I brought to the holiday party. I didn’t take pics that night and had enjoyed most of the leftovers before I remembered to snap a pic. Hence, only two to show you but you get the idea, right? 🙂
Then there are the quick and easy meals and snacks that are the day-to-day routine.

That’s the overview. As I’m a last minute planner, I’m not sure what we’re having on Christmas Day but I do know it’s going to be delicious!
